Strawberries

Here's what we did with some of the strawberries we got from the farm:

Good Night Waffles (from the cookbook that came with our Waring Pro Professional Belgian Waffle Maker--I highly recommend this brand/model if you're in the market!)
  • 1/2 c. lukewarm water
  • 1 Tbsp. sugar
  • 2 1/4 tsp active dry yeast (1 packet)
  • 2 c. milk, warmed
  • 1/2 c. unsalted butter, melted and cooled
  • 1 tsp. salt
  • 2 c. flour
  • 2 large eggs, lightly beaten
  • 2 tsp. vanilla extract
  • 1/4 tsp. baking soda
The night before, or at least 8 hours before baking, combine the warm water, sugar and yeast. Let stand 10 minutes, until foamy. Stir in the warm milk, melted butter and salt. Beat in the flour until smooth. Wrap bowl tightly with plastic wrap and let stand overnight (or 8 hrs) on the countertop--do not refrigerate.

When ready to bake, preheat waffle maker. While it is heating, stir eggs, vanilla and baking soda into the batter. Bake according to your waffle maker's instructions.

The waffles are deliciously light; almost doughy in the middle and crispy on the outside. We topped with Cool Whip and our strawberries.

And of course...

Strawberry Shortcake

We like the Bisquick recipe:

2 1/3 c. Bisquick
1/2 c. milk
3 Tbsp. sugar
3 Tbsp. melted butter

Heat oven to 425 degrees. Stir ingredients until soft dough forms. Spread in ungreased 8" square or round pan OR (as we do), drop by spoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown.
